Method
- Cook rice and separate it in a bowl, allowing it to cool.
- Cut the lemons and squeeze the juice, keeping it aside.
- Heat oil in a pan and add mustard seeds, turmeric, channa dhal, urid dhal and cashews. When it starts spluttering, add frozen peas, green chillies and curry leaves.
- Once the rice is separated and cooled, add lemon juice, salt, fresh coconut and the cashew mixture. Mix it thoroughly and sprinkle chopped coriander leaves on top.
- Serve with pappadams or chips.
