Method
- Cut the vegetables into long, thin pieces. Except capsicum, boil the other vegetables using a small amount of water. Drain any excess water.
- Fry the capsicum and keep it aside.
- Grind 1 onion, mint, garlic, green chillies, coconut, cinnamon, cloves and coriander seeds into a fine paste.
- Heat oil in a pan and add cashews and bay leaves. When it turns light brown, add ground masala and fry until the raw smell goes and the oil separates from the mixture.
- Now add all the vegetables including capsicum, along with salt and fry for a further 3 mins.
- Cook rice and let it cool. Once cool, add the fried vegetables and mix it thoroughly. Serve with raita.
