Method
- Slice onions and tomatoes and keep aside.
- Grind onion, garlic, ginger, green chillies, coconut, cinnamon, cloves, cardamom and chilli powder into a fine paste.
- Heat oil in a pan and add cashews and bay leaves. When it turns light brown, add onions and fry until they are golden in colour. Add ground masala and fry for 5 minutes.
- Now add tomatoes and salt and fry for another 5 minutes.
- Cook basmati rice and spread it in a bowl and allow it to cool.
- When it is cool, add the rice to the mixture and fry for 2-3 minutes. Add chopped coriander leaves and serve it with raita.
