Mint Rice/Pudina Pulao




Ingredients
Basmati Rice
2 cups
Mint
I bunch
Carrots
1 or 2
Potatoes
2
Green beans
A few
Red or green capsicum
1 big
Fresh coconut
½ cup
Onion
1 big
Green chillies
3-4
Coriander seeds
1 tsp
Cinnamon sticks
2-3 pieces
Cloves
2
Garlic
3 – 4 cloves
Salt
As per taste
Broken Cashews
A few pieces
Bay leaves
A few
Salt
As per taste
Oil
3 tbspn























Method
  1. Cut the vegetables into long, thin pieces. Except capsicum, boil the other vegetables using a small amount of water. Drain any excess water.
  2. Fry the capsicum and keep it aside.
  3. Grind 1 onion, mint, garlic, green chillies, coconut, cinnamon, cloves and coriander seeds into a fine paste.
  4. Heat oil in a pan and add cashews and bay leaves. When it turns light brown, add ground masala and fry until the raw smell goes and the oil separates from the mixture.
  5. Now add all the vegetables including capsicum, along with salt and fry for a further 3 mins.
  6. Cook rice and let it cool. Once cool, add the fried vegetables and mix it thoroughly. Serve with raita.
