Palak Paneer

Ingredients
Fresh/Frozen spinach
Big bunch/250 gms
onions
2 large
Tomatoes
2 large
Green chillies
2 -3
Cream
50 ml
Paneer cubes
50 gms
Cumin seeds
2 tsp
Dhania powder
2 tsp
Chilli powder
½  tsp
Garam masala/kitchen king
1 tsp
Salt
According to taste
Oil
1 tbsp

Method
  1. Defrost the spinach in the microwave for 2 to 3 minutes. If using fresh spinach, wash and chop it finely and add a little bit of water and boil until it is soft.
  2. Finely chop onions and divide it into 2 portions.
  3. Heat oil in a pan and add green chillies and half the onions. Fry for 2 minutes.
  4. Add dhania powder, chilli powder and garam masala and fry for 2 minutes.
  5. Add tomatoes and fry until the raw smell goes.
  6. Let it cool and then grind spinach, onion and tomatoes into a fine paste.
  7. Heat oil in a pan, add cumin seeds. When it turns brown, add the second half of the onions and fry until the onions become golden brown.
  8. Now add the ground mixture and mix it thoroughly and cook for about 3-4 minutes in a reduced flame.
  9. Fry the paneer cubes and add to the mixture.
  10. Finally, add fresh cream and serve.
Variations:
  • Use ginger garlic paste when frying onions.
  • Use tin tomatoes instead of fresh ones for the curry as the tin tomatoes are more red in colour, juicy and mixes well soon.
